Classic recipes made using the healthy and convenient sprouts 

Including sprouts in your diet can be a heavy lift for people used to the American classics a lot of us grew up with. This is my 21st century version of the classic tuna salad sandwich. 

INGREDIENTS

1 cup sprouted chickpeas

1/2 cup diced red onion

2 stalks celery diced

1 grated carrot

1 tsp capers

1 Tbsp nutritional yeast flakes

1 Tbsp mayo

1 tsp tamari

1/2 lemon juiced

INSTRUCTIONS

1. Whisk the mayo, tamari (or soy sauce), lemon juice, and nutritional yeast flakes together in a medium bowl

2. Pulse the garbanzo sprouts about 30 times in the food processor.

3. Add capers, carrot, mashed garbanzo sprout, onion and celery to the dressing and mix well.

4. Serve on a bed of lettuce or a piece of toasted bread with tomato and leafy sprouts. Grandma would be proud.
